A healthy version of your favorite childhood comfort food! These Paleo, Whole 30 approved Sloppy-Joes are delicious, flavorful and really easy to make! It will take you about 30 minutes.
You can also double (or more) the recipe and freeze some to enjoy later!
INGREDIENTS
2 tablespoons olive oil
1 red, yellow or orange bell pepper , diced
2 medium carrots, cut into thin slices
1 large onion, diced
3 garlic cloves, minced
1 teaspoon salt
1 pound grass-fed ground beef
3/4 cup sugar-free ketchup
1/4 cup coconut aminos*
2 tablespoons tomato paste
3 cups zucchini noodles or sweet potato
Optional, for toppings: sliced green onions, sliced dill pickles
*Coconut Aminos is a delicious seasoning alternative that you can use exactly like soy sauce in salad dressing, marinades, sautés or to sprinkle on sushi. It is made with coconut tree sap and not coconuts, so it does not have a coconutty flavor
DIRECTIONS
Sauté the onion in the olive oil over medium heat for 2-3 minutes
Add garlic, carrots and bell pepper and cook for about 4-5 minutes, until they start to soften and onions start to become translucent.
Add the ground beef and break it up with a spatula. Cook until browned.
Add salt, ketchup, coconut aminos and tomato paste and stir to combine.
Cook on low for 15 minutes.
Serve over sautéed/steamed zucchini noodles, a baked sweet potato, or just eat it out of a bowl!
Top with sliced green onions or dill pickles
