Liver Pate

INGREDIENTS:

1/2 pack bacon

1-2 tsp cooking oil/fat (duck fat, coconut oil, lard)

4 cloves of garlic, chopped

1 sweet onion, chopped

1 pound liver (chicken or turkey, cut up in 4)

1 teaspoon Italian seasoning

1 teaspoons salt

2 tbsp aged balsamic vinegar


INSTRUCTIONS:

  1. Cook the bacon. Once bacon is cooked, set on a plate.

  2. While the bacon is cooking, peel and chop the garlic and let it sit for 10 minutes.

  3. Add the onions to the same pan, and saute them in the bacon fat, until tender (about 5 min). If you don't have enough fat, add a little cooking oil/fat. Stir occasionally.

  4. Add the garlic and saute another 2 minutes.

  5. Add livers and cook, stirring occasionally, for about 6-8 minutes (the middle should still be pink)

  6. Add salt, seasoning and balsamic vinegar. Stir and remove from heat.

  7. Add to a food processor or blender and blend until smooth.

  8. You can enjoy it right away with vegetables (cucumber slices, pepper slices, carrots, etc)
