"Kalecious" Pancakes

If your kids don't like kale, this might be a good recipe to try and include it in. They are delicious, very easy to make and quite nutritious!


4 eggs

1 ripe plantain or banana

2 tbsp coconut flour

1 cup kale or other greens

1 tsp vanilla extract

Mix all ingredients in a food processor.

Scoop 1/4 cup of the batter into a pre-heated pan and cook like any other regular pancakes.

Enjoy as-is or top with butter, honey or maple syrup.

Hi. Could I possibly substitute Tigernut, cassava, tapioca, sorghum, spelt or einjorn flour for the coconut flour?
