Grain Free Vegan Cake

Dealing with food allergies or sensitivities can be so incredibly stressful; especially around birthdays. I needed a recipe for my 2 year old's birthday, that was Paleo and free of sugar, coconut, nuts, eggs and more. I found a recipe on Gutsy by Nature website and tweaked it a little bit, to fit my son's diet. And as usual, I added some greens to it, for some extra nutrients.


INGREDIENTS

  • 3 very ripe bananas or plantains

  • ⅓ cup carob powder

  • 1 cup tigernut flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup apple or pear sauce

  • ¼ cup avocado or grapeseed oil

  • 2 cups spinach or other greens

  • oil for greasing the pan


DIRECTIONS

  1. Preheat oven to 350° F.

  2. Brush a glass pie dish with oil.

  3. Combine all ingredients in a food processor until a smooth batter forms.

  4. Pour batter in oiled pan and bake for 30 minutes.
