Dealing with food allergies or sensitivities can be so incredibly stressful; especially around birthdays. I needed a recipe for my 2 year old's birthday, that was Paleo and free of sugar, coconut, nuts, eggs and more. I found a recipe on Gutsy by Nature website and tweaked it a little bit, to fit my son's diet. And as usual, I added some greens to it, for some extra nutrients.
INGREDIENTS
3 very ripe bananas or plantains
⅓ cup carob powder
1 cup tigernut flour
1 teaspoon baking soda
½ teaspoon salt
½ cup apple or pear sauce
¼ cup avocado or grapeseed oil
2 cups spinach or other greens
oil for greasing the pan
DIRECTIONS
Preheat oven to 350° F.
Brush a glass pie dish with oil.
Combine all ingredients in a food processor until a smooth batter forms.
Pour batter in oiled pan and bake for 30 minutes.
