Makes about 4 servings
INGREDIENTS
2 chicken breasts cooked and chopped
1 1/2 cups chopped tomatoes
1 large diced cucumber
1 diced avocado
1/4 small minced red onion
1 handful minced parsley
2 cups chopped greens (red leaf, green leaf or Romaine lettuce)
DRESSING INGREDIENTS
Juice of 1 lemon
Juice of 1 lime
¼ cup olive oil
2 cloves minced garlic
1 tbsp honey
salt and pepper to taste
Optional: 4 oz feta cheese and 6-8 slices of bacon, chopped
DIRECTIONS
Place dressing ingredients in a mason jar, seal and shake well
Toss salad ingredients together in a large bowl
Start with adding half of the dressing and use more, as needed.
Enjoy immediately. If you are not eating the entire salad right away, store in the fridge, without dressing on it.
